4 кабачка 4 яйца 2 ст. л. муки 1 ст. панировочных сухарей 0,5 ч. л. паприки щепотка мускатного ореха соль, перец по вкусу растительное масло для обжаривания

Приготовление

Нарежь кабачки пластинками толщиной 1 см. Посоли и дай постоять 10 минут, затем слегка отбей каждую пластинку деревянным молоточком. Яйца взбей со специями, посоли по вкусу. Каждую пластинку обмакни сначала в муку, затем в яйцо и обваляй в сухарях. Уплотни панировку руками, разложи кабачки на досочке или подносе и дай постоять 20 минут. Это необходимо, чтобы панировка не отвалилась во время обжаривания. Обжаривай Отбивные из кабачков на небольшом количестве растительного масла на среднем огне.

Приготовление

Натри кабачки на крупной терке, а картофель и лук на мелкой терке. Посоли и дай постоять 10 минут. Слей лишнюю жидкость. В овощную массу добавь яйца, манку, тертый сыр, рубленную зелень и чеснок. Тщательно перемешай, у тебя должно получиться очень густое тесто. Руками или ложкой сформируй котлеты и выложи их на смазанный растительным маслом противень. Запекай в духовке при температуре 180 градусов по 15 минут с каждой стороны. Или обжарь котлеты на сковороде под крышкой.

Кабачковые брусочки со специями

Ингредиенты

4–5 молодых кабачков 1 ч. л. паприки 1 ч. л. сухого чеснока 1 ст. л. растительного масла 30 г твердого сыра свежая зелень соль по вкусу

Разрежь кабачки на 8–12 частей. У тебя должны получиться брусочки длиной 5–7 см. Посоли, добавь специи, тертый сыр и растительное масло. Выпекай в духовке на решетке при температуре 200 градусов до золотистой корочки. Подавай со сметаной.

Творожный омлет с кабачками к завтраку

Ингредиенты

1 кабачок 3 яйца 1 помидор 125 г творога пучок укропа соль, перец по вкусу 2 ст. л. растительного масла

Нарежь кабачки кубиками или натри на терке. Обжарь на сковороде на растительном масле. Добавь помидор (дольками) и взбитые с солью яйца. Посыпь сверху творогом, сделай огонь на минимум и накрой крышкой.

Через пару минут переверни омлет, посыпь укропом и выключи. Дай постоять пару минут и подавай к столу.

Тушеные кабачки по-татарски

Ингредиенты

1 кг кабачков 1 болгарский перец 1 большое яблоко 1 большая луковица 1 морковь 1 головка чеснока 70 г томатной пасты или 2–3 помидора 1/3 ст. сахара 1/3 ст. растительного масла 2 ст. л. сметаны соль, специи по вкусу

Приготовление

Вымытые кабачки (желательно цукини) нарежь брусочками длиной не более 5 см. Яблоко и морковь натри на мелкой терке, лук и перец нарежь кубиками. В кастрюле с толстым дном или котелке обжарь овощи на растительном масле. Когда овощи станут мягкими, добавь томатную пасту. Туши еще несколько минут и добавь кабачки.

Посоли, добавь сахар, специи и накрой крышкой. Туши на медленном огне до готовности (примерно 30 минут). В конце добавь сметану и измельченный чеснок. Доведи до кипения и выключи.

Остро-сладкая закуска из кабачков

Ингредиенты

500 г молодых кабачков 1,5 ч. л. соли 70 г растительного масла 2 ст. л. уксуса 2 ст. л. мёда 5–6 зубчиков чеснока молотый черный перец свежая зелень

Приготовление

Вымытые кабачки нарежь тонкими кружочками или полосками. Для этого лучше воспользоваться овощечисткой. Посоли и дай постоять 15 минут. Для маринада смешай все остальные ингредиенты, предварительно измельчив зелень и пропустив чеснок через пресс.

Слей с кабачков воду и залей овощи маринадом. Перемешай и оставь мариноваться 2–3 часа, а после подавай к столу.

Ложный мясной паштет из кабачков

Ингредиенты

400 г молодых кабачков 300 г шампиньонов 1 большая луковица 1 морковь 2 ст. л. соевого соуса 2 ст. л. растительного масла 2 ст. л. сливочного масла 5–6 зубчиков чеснока 100 г мягкого сливочного сыра (можно плавленый сырок) соль, специи по вкусу

Приготовление

Кабачки натри на терке, посоли и оставь на 15 минут. Тем временем мелко нарежь грибы и лук. Морковь натри на мелкой терке. Обжарь всё на смеси сливочного и растительного масла. В конце добавь соевый соус, рубленый чеснок и специи. Слей с кабачков воду и обжарь на сухой сковороде буквально 1 минуту. Затем добавь 1 ст. л. сливочного масла, накрой крышкой протуши до мягкости.

С помощью блендера или кухонного комбайна преврати горячую (это важно!) овощно-грибную массу в паштет. Добавь Сливочный сыр или тертый плавленый сырок. Еще раз перемешай блендером. Остывший паштет намазывай на бутерброды или заворачивай в Тонкие блинчики.

Закусочный торт из кабачков в духовке

Ингредиенты

800 г кабачков 3 яйца 80 г муки 80 г манки 0,5 ч. л. соды 5–6 помидоров 200 г сметаны 300 г брынзы или сулугуни 4 зубчика чеснока 1 пучок укропа соль и специи по вкусу

Приготовление

Кабачки натри на мелкой терке посоли и оставь на 15 минут. Слей образовавшуюся жидкость и добавь яйца, соду, муку, манку, специи и зелень. Тщательно перемешай.

Вылей тесто на противень, смазанный растительным маслом. Толщина теста должна быть не более 1 см. Выпекай корж при температуре 180 градусов 20–30 минут. Готовность проверяй спичкой, после прокалывания коржа она должна оставаться сухой. Остывший большой корж разрежь на 3–4 маленьких. Брынзу натри на мелкой терке и смешай со сметаной.

Собирай торт, смазывая каждый корж сметанно-сырным кремом. Между слоями выложи помидоры, нарезанные тонкими кружочками. Поставь торт в холодильник на 3–4 часа для пропитки.

2–3 кабачка 3 яйца 1 ст. манки 2 луковицы 2 зубчика чеснока зелень соль и перец по вкусу растительное масло для обжаривания

Кабачки и лук натри на крупной терке посоли и оставь на 5 минут. Слей образовавшуюся жидкость и добавь тертый сыр, яйца, манку, соль, специи, рубленый чеснок и зелень. Тщательно перемешай. Обжаривай на растительном масле до золотистой корочки.

Ингредиенты

2 молодых длинных кабачка 300 г куриного филе 50 г сыра 1 помидор 50 г творога 2 ст. л. сметаны 1 зубчик чеснока 1 ст. л. растительного масла соль, перец по вкусу свежая зелень

Приготовление

Вымытые кабачки нарежь пластинками шириной не более 0,5 см. Посоли, смажь растительным маслом и слегка запеки в духовке (3–5 минут) до мягкости. Куриное филе нарежь полосками, слегка отбей молоточком, посоли и поперчи по вкусу. Творог смешай со сметаной, зеленью и чесноком. На остывшие кабачки выложи куриное филе, смажь творожной массой и посыпь тертым сыром. На край положи дольку помидора и сверни всё в рулет. Закрепи зубочисткой.

Рулетики выложи на противень и запекай в духовке при температуре 180 градусов 25 минут.
